Three new sparkling wines from the Oltrepò Pavese enrich the range of a family company which, for 120 years, has been one of the most representative producers in the Valpolicella Classica and Lugana areas: #thefirstbubble is Tommasi’s new winemaking challenge.

A gaze into the future, a spirit of initiative, new ideas based on the family’s experience and knowledge; respect for tradition and the savoir faire that has been handed down through four generations: this combination between the modern and the ancient is what lies behind the first release of Metodo Classico wines from the Tommasi family.

After 120 years producing fine red wines like Amarone and the white Lugana from Lake Garda, Tommasi is now presenting #thefirstbubble from Tenuta di Caseo, or rather, the first bubblies: the new sparkling wines, from the Oltrepò Pavese, one of the most prestigious regions for Metodo Classico - Champenoise method, which these wines evoke in their names. Their labels in fact say 530 Pinot Nero Rosé, 470 Pinot Nero and 410 Chardonnay, and they are three expressions of Metodo Classico Brut, which come from the 90 hectares of vineyards with some of the highest altitudes in the Oltrepò Pavese, lying in fact on hills at 410, 470 and 530 meters above sea level at Tenuta di Caseo in the commune of Colli Verdi, in the Alta Versa Valley Lomabrdy, which was purchased by the Tommasi family in 2013.

530 Pinot Nero Rosé Metodo Classico Brut, from the 2017 vintage and matured 36 months on its lees, comes from the highest vineyards of Tenuta di Caseo, and is made exclusively from Pinot Nero grapes. It is a characterful wine, which displays refined and attractive aromas of red fruits and wild roses. It is fresh on the palate with an appealing vein of acidity that makes it perfect for a romantic summer dinner.

470 Pinot Nero Metodo Classico Brut is made from 100% Pinot Nero grapes. It is a dry and intriguing wine from the 2017 vintage, which matured for 36 months on its lees. 470 Pinot Nero displays a dense perlage of tiny, fine and persistent bubbles, as well as a fragrance that is as fresh as a morning breeze in June. Ideal as an aperitif, or with lunch or dinner, it goes exceptionally well with risottos, fried foods, and grilled fish or white meats.

410 Chardonnay Metodo Classico Brut is produced exclusively from Chardonnay grapes; it is a 2017 vintage wine that has spent 36 months on its lees. It is an elegant sparkling wine, with tiny, persistent bubbles. Perfect for an aperitif with friends or with a fish dinner: the ideal wine for accompanying the delightful evenings of summer.

Three sparkling wines that are expressions of one of the finest wine-producing zones in Italy: the Oltrepò Pavese is in fact the third most important region in Europe for the production of Pinot Nero/Noir, and also one of the most significant for Metodo Classico wines. The soils of the vineyards at Tenuta di Caseo are composed primarily of clay, with seams of active limestone that contribute towards guaranteeing a marked minerality in the wines. It is this terroir which, together with meticulous work in both the vineyards and winery, also gives these wines notable potential for aging.

The production of 530 Pinot Nero Rosé, 470 Pinot Nero and 410 Chardonnay is limited: around 6-8,.000 bottles of each type.

Air Dolomiti e Tommasi hanno in comune la cura per il cliente e la valorizzazione del territorio. Il viaggio enogastronomico è stato studiato per offrire ai viaggiatori un’esperienza culinaria di qualità in linea con gli standard della Compagnia.
Tommasi oggi non significa solo vino, ma anche ristorazione d’eccellenza con il Ristorante Borgo Antico, presso Villa Quaranta Wine Hotel & SPA e Caffè Dante Bistrot, nel cuore di Verona. Gli chef Emanuele Selvi e Alessandro Bozza hanno pensato ad un menù a 4 mani che mescola abbinamenti coinvolgenti e sapori autentici. Un percorso gastronomico dove le materie prime, la tradizione e l’indiscussa creatività, faranno vivere un’esperienza unica.
Il menù prevede una portata per ogni momento della giornata: per colazione, la torta russa, specialità tipica veronese con un gustoso ripieno di mandorle e amaretti; per pranzo, salame di coniglio in porchetta, radicchio veronese brasato e riduzione al vino Valpolicella, prelibatezza saporita e sfiziosa. In orario pomeridiano, come merenda, una bavarese allo zabaglione con mandorlato e inserimento al caffè. Per cena, infine, salsiccia lucanica cotta nel vino Ripasso su crema di topinambur profumata alla curcuma con mezze sfere croccanti di Parmigiano e zenzero candito, un connubio perfetto esaltato dalle spezie orientali. Sulle tratte selezionate, inoltre, a pranzo e a cena, sarà proposta anche la sbrisolona al formaggio cimbro della Lessinia profumata al rosmarino.
I piatti saranno serviti in abbinamento alle bollicine del Caseo Pinot Nero Brut Rosé, al bianco Falanghina in purezza del Paternoster Vulcanico e all’elegante Tommasi Ripasso Valpolicella Classico Superiore doc. Questa esclusiva selezione allieterà l’esperienza di volo, rendendo speciale il viaggio durante le festività.
